Our 100% Chardonnay cuvée “Les Cachettes” reveals all the elegance and purity of this emblematic grape variety, through a unique plot selection in the Mâconnais. Its complex nose combines bright citrus fruits, buttery notes and white flowers. On the palate, mineral freshness is balanced by a gourmet touch and long finish. Aged 24 months on laths, this fine-bubbled cuvée is the perfect accompaniment to refined aperitifs or delicate fish dishes. A precise, refined expression of Crémant de Bourgogne.

Tasting

Complex, elegant nose with citrus notes (lemon, lime) and aromas of pastries, fresh butter and acacia flower. Well-balanced on the palate, with freshness offset by fullness, delicious and long.

Foaming and ageing

Liqueur de tirage (a mixture of yeast and sugar) and leaven are added to the wines before bottling. Under the action of the yeast, carbon dioxide generates effervescence. The bottles remain on laths for a minimum of 24 months at constant temperature in our cellars. This prolonged ageing allows the wine to develop its specific aromas and to offer bubbles of great finesse. The bottles are then stirred and disgorged to remove the yeast deposit. A dosage-determining expedition liqueur is added before labeling and packaging.

Winemaking

On receipt of the harvest, we carry out a slow pressing using our pneumatic presses to respect the integrity of the berries. The first presses, richer and more complex, are selected to make the best basic wines in stainless steel tanks. After filtration and clarification, the wine is ready for bottling.
