Our Cuvée Excellence Rosé Brut is a delicate harmony of Chardonnay, Pinot Noir and Gamay from 25-year-old vines grown on the clay-limestone terroirs of Burgundy. Hand-harvesting and slow pressing of the first presses preserve aromatic purity, while malolactic fermentation in stainless steel vats refines its structure. Aged 24 to 36 months on laths, this crémant develops exceptionally fine bubbles and intense aromas of strawberry and raspberry, enhanced by a fresh, lively finish.

Tasting

Deep pink color. Predominantly red fruit, with notes of strawberry and raspberry on the nose, followed by a fresh finish on the palate.

Food and wine pairing

As an aperitif, with fresh oysters, shrimp, or a seafood platter to emphasize the fresh, fruity notes.

Operating temperature :

Serve chilled at 7-8°C

Foaming and ageing

We add yeast and sugar to create foam in the bottle. Aging lasts 24 to 36 months on laths. The bottles are kept at a constant temperature in our cellars. This prolonged ageing allows the wine to develop its specific aromas and fine bubbles. The bottles are then stirred and disgorged to remove any yeast deposits.

Winemaking

On receipt of the harvest, we carry out slow pressing using our pneumatic presses. The first pressings, richer and more complex, are selected to produce the best base wines. Fermentation takes place in temperature-controlled stainless steel tanks. After vinification, our team of oenologists meticulously composes the blend.
