Our Crémant de Bourgogne Blanc Brut Boisé embodies the subtle alliance between the natural freshness of crémant and the elegance of controlled oak. Carefully crafted from noble grape varieties, this cuvée reveals an assertive personality, while retaining finesse and balance. It is aimed at lovers of complex bubbles, in search of a crémant with character, both refined and gourmet. Designed for more intense tasting moments, this cuvée is the perfect accompaniment to gourmet aperitifs, roast poultry or mature cheeses.

Tasting

This wine has a luminous golden color, animated by a fine, persistent mousse. The nose is full and expressive, revealing aromas of vanilla, dried fruit, toast and ripe fruit, brought on by barrel ageing. On the palate, the attack is generous, with a lovely roundness balanced by a well-dosed freshness. The texture is silky, and the long, warm finish leaves a delicate woody imprint.

Food and wine pairing

Our Crémant de Bourgogne boisée goes perfectly with blanquette de veau or sautéed poultry with cream sauce.

Foaming and ageing

Liqueur de tirage (a mixture of yeast and sugar) and leaven are added to the wines before bottling. Under the action of the yeast, carbon dioxide generates effervescence. The bottles remain on laths for a minimum of 12 months at constant temperature in our cellars. This prolonged ageing allows the wine to develop its specific aromas and fine bubbles. The bottles are then stirred and disgorged to eliminate yeast deposits. A dosage-determining liqueur is added before labeling.

Winemaking

On receipt of the harvest, we carry out slow pressing using our pneumatic presses. The first pressings, richer and more complex, are selected to produce the best base wines. Fermentation takes place partly in oak barrels and the rest in temperature-controlled stainless steel tanks. After vinification, our team of oenologists meticulously composes the blend between barrel-aged and tank-aged wines, to add a touch of controlled oakiness.
