Tasting

This Crémant has a pale yellow color with golden highlights, enlivened by a fine, persistent effervescence. The complex, expressive nose reveals aromas of white flowers, white-fleshed fruits such as apple and pear, and subtle notes of brioche and almond. On the palate, the attack is lively and fresh, offering a beautiful harmony between controlled acidity and a creamy texture. The finish is long and elegant, leaving a delicately fruity, lightly toasted imprint.

Foaming and ageing

Liqueur de tirage and sourdough are added to the wines before bottling. Under the action of yeast, carbon dioxide produces effervescence. The bottles remain on slats for a minimum of 18 months at constant temperature in our cellars. This prolonged ageing allows the wine to develop its specific aromas and fine bubbles. The bottles are then stirred and disgorged to eliminate yeast deposits. A dosage-determining liqueur d'expédition is added before labeling and packaging.

Winemaking

On receipt of the harvest, we carry out slow pressing using our pneumatic presses. The first pressings, richer and more complex, are selected to produce the best base wines. Fermentation takes place in temperature-controlled stainless steel tanks. After vinification, our team of oenologists meticulously compose the blend.
